Friday Afternoons Over the Sea
Every Friday at 10:30 AM, twelve guests climb The Mayan's dramatic staircase — carved to represent Xibalba, the Maya underworld — and emerge into a second-floor bar floating over the Caribbean.
For two hours, they become bartenders.
What You Learn
Our head bartender walks guests through three original cocktails:
- Xibalbá Cacao Mezcalita — cacao tincture, mezcal, fresh lime, Tajín rim
- Mayan Gold Paloma — fresh grapefruit, mayan-gold honey syrup, tequila, Belizean sea salt
- Caribbean Fern — local rum, cucumber, fresh mint, tonic, reef bitters
The View
You mix your drinks 15 feet above the water. The reef shimmers below. Frigate birds wheel overhead. By the second cocktail, the class has become a gathering — strangers sharing something handmade and unhurried.

The class holds 12 guests and sells out most Fridays. Includes all ingredients, a recipe card, and a complimentary brunch table before the class.
